Sol d Mexico is what you might call a “hidden gem”, Sol de Mexico is tucked near an ally in Downtown Eustis. When you walk inside the decor is almost as great as their food. For something a little different, I have to suggest the Cancun Plate- a yummy blend of shrimp with mushrooms and onions over rice and Queso. So delicious! The standout item for me at Sol though is their margaritas! Try their blue margarita for a twist on the classic, and get any of their flavors frozen!
